Cow's milk cheese
The "Roccolo" in Valtaleggio is a cylindrical, often surrounded by tall hedges or trees. This typical building is still used by hunters as a point of refuge and advantage for hunting. Its shape was immediately associated with this cheese, created and invented by brothers Arrigoni when, 10 years ago now, this product has been put on the market for the first time. This cheese has a thin brown, dark rough bark. The interior has a compact structure without holes. Centripetal maturation makes it extremely creamy near the sides and thicker in the middle, in which the plot is whiter and chalkier. The long aging process gives this cheese a very intense flavor, with hints of wild berries in combination with a very delicate taste.
